Chicken Chasseur

Ingredients

  • 500g Chicken Thigh / or Chicken Drumsticks
  • 150g Mushrooms sliced
  • 1 Whole onion sliced
  • 2tbs Butter or olive oil
  • 3tbs Cloves of Garlic, chopped
  • ½ bch Thyme
  • 100ml White Wine
  • 150ml Chicken Stock
  • 2 tbs Tomato Paste

Instructions

  1. Seal off the chicken in the butter or oil, then remove. Sweat off the onion and mushrooms in a fry pan with garlic, add the fresh thyme.
  2. Dust with the flour and tomato paste.
  3. Next add in the white wine and chicken stock.
  4. Check for seasoning.
  5. Add the chicken and allow to simmer for 5 -10 minutes (allow 25 minutes for chicken drumsticks) until cooked.
  6. Serve with some steamed rice or roast potatoes.

In line with government-imposed restrictions all Wests clubs are temporarily closed effective from 5pm Thursday 5th August 2021. Daily advice provided by the Australian Government Department of Health is being monitored and responded to accordingly. The Gateway Inn, Newcastle is also considered an essential service however we have made the decision to temporarily close this hotel until restrictions can be eased.
