Moroccan Meatballs
500g Good low fat mince
1 Onion, finely diced (food processor)
2 Carrot, grated
2 Cloves garlic, crushed
½ bch Coriander, chopped
½ pce Ginger, grated
40g Pine nuts, toasted
2tbs Ground Coriander
2 tbs Ground Cumin
1 Egg
Seasoning
Combine all ingredients together and make into small round balls.
Tomato Sauce
1 Onion, diced
2 Cloves garlic, crushed
500ml Italian Tomato Sauce
2 tbs Ground Cumin
2 tbs Ground Coriander
½ bch Coriander, chopped
Seasoning
Sweat off the onion in a fry pan with garlic, add the fresh coriander, cumin and ginger. Next add in the tomato sauce and seasoning (if required to taste). Allow to cook for 5 minutes, put on low heat then add the meatballs and simmer for 15 minute until cooked.
Serve with some steamed rice that has been cooked with ¼ tsp of turmeric powder.
